Recipe courtesy of Food Network:
Combine 1.5 lbs of sweet potatoes, chopped and peeled, with:
* 1 bunch of scallions (cut into 2-inch pieces)
* 6 crushed garlic cloves
* 1 Tbsp. fresh thyme
Drizzle with olive oil (about 1/4 cup) and season lightly with salt and pepper. Toss together.
Wrap in a sheet of foil and grill over low heat until potatoes are tender.
