Friends, I am so excited to share with you a new crockpot recipe that is easy to make, nutritious, easy clean-up, and delicious! I just gave this a try myself and am a big fan. Loaded with protein, superfoods, and fiber, it’s a definite winner.
Ingredients:
- 2 sweet potatoes, diced
- 28 oz. can diced stewed tomatoes
- 8 oz. can tomato sauce
- 3/4 cup diced sweet onion
- 1/2 cup chopped celery
- 1/2 cup water
- 1 Tbsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. cinnamon
- 1 pinch sea salt
- 1 pinch ground black pepper
- 1 pinch cayenne pepper
- 1 pinch garlic powder
- 1 pinch onion powder
- 1 lbs. ground turkey
- 12 oz. can black beans, drained and rinsed
- 1 cup corn
Instructions:
- Place sweet potatoes, stewed tomatoes, tomato sauce, onion, celery, water, chili powder, cumin, cinnamon, salt, black pepper, cayenne pepper, garlic powder, and onion powder in a slow cooker. Cook on high, stirring occasionally, for 5 hours.
- Heat a large skillet over medium-high heat and stir in ground turkey. Cook until no longer pink. Drain and discard any excess grease. Add cooked ground turkey, black beans, and corn to sweet potato mixture in the slow cooker; cook until flavors have blended, approximately 1 more hour. Serve warm.
Is it possible to make this recipe meatless?
Absolutely! Just forgeo the meat. 🙂
