Our Top 5 Favorite Recipes for Memorial Day Weekend!

1. Berry Patriotic Fruit Salad 

By far more delicious than that cupcake or candy, and way more nutritious!

Ingredients:

1 small container fresh blueberries, rinsed

1 large container fresh strawberries, rinsed

2 cups diced watermelon (optional)

All-natural mini chocolate chips (I prefer Enjoy Life brand)

Shredded coconut (for topping)

Combine all above fruits and top with shredded coconut and mini chocolate chips. Enjoy!

2. Refreshing Spinach Salad

Ingredients:

8 cups fresh baby spinach

1 medium orange bell pepper, thinly sliced

1/2 cup fresh blueberries

1/2 cup sliced strawberries

1/4 cup slivered almonds

8 Tbsp. Strawberry Vinaigrette

Vinaigrette:

1/2 lb. fresh strawberries

2 Tbsp. honey

2 Tbsp. apple cider vinegar

2 Tbsp. olive oil

1/4 tsp. salt

1/4 tsp. black pepper

Blend in a blender until liquid.

 

Combine ingredients in a large serving bowl. Drizzle with vinaigrette, toss, and serve.

3. Cucumber Salad

By far the most filling and healthy option at the table. Make plenty, because friends will be diving in!

Ingredients:

2 large cucumbers

1/2 onion

2-3 tomatoes

Dressing: 

3 Tbsp. white wine vinegar

2 Tbsp. extra virgin, cold-pressed olive oil

1 tsp. oregano

1/8 tsp. salt

Combine ingredients and mix well. To sweeten, add a tsp. of local honey.

4. Lemony Quinoa Salad

Light, refreshing, and a taste of summer. Enjoy!

Ingredients:

1/4 cup cooked quinoa

2 tsp. pine nuts

2 Tbsp. chopped cilantro

1 Tbsp. fresh lemon juice

2 tsp. pitted olives

Himalayan salt

Toast pine nuts via skillet or oven. Combine all ingredients and mix well.

5. Green Tea Citrus-Infused Water

Water

Sound ridiculous to bring flavored water to a picnic? Nah. What sounds ridiculous is consuming 3 or 4 alcoholic beverages loaded with calories and sugar. Hydrate, and enjoy yourself!

Ingredients:

1 organic grapefruit

1 organic lemon

1 Tbsp. Grade B maple syrup

2 bags of green tea

Infuse for 2-3 hours at room temperature in an approximate 93-oz pitcher of water. Remove tea bags, and serve.
