Welcome to summer! 

One of our FAVORITE things about summer are all of the fresh fruits and veggies in season. And if you’re like us, you’re DYING to get to your local Farmer’s Market to load up on the flavor! 

Which is why we’ve put together this amazing list of our favorite recipes for summer. These are ALL NEW! And guess what? Combining them all for one delicious intro to summer treat is also recommended. 😉

Cucumber Dill Salad

Ingredients:

3 medium cucumbers, sliced

1 small white onion, sliced

2 tsp. Himalayan sea salt

2 Tbsp. white wine vinegar

1 Tbsp. finely chopped fresh dill

Directions:

Combine in medium mixing bowl, toss, and serve. 

Fix Equivalents:

1 cup = 1 Green

Homemade Kale Chips

Ingredients:

1 large head of kale, stems removed

Extra virgin olive oil

Sea salt

Cayenne pepper

Directions:

Toss kale leaves and olive oil together and lay on cookie sheet. Sprinkle with sea salt and cayenne pepper (to taste). Bake at 350 degrees for 10-15 minutes, or until crispy. 

Bruschetta Chicken

Ingredients:

3 medium vine ripe tomatoes

2 small cloves garlic, minced

1/4 cup chopped red onion

 2 Tbsp. fresh basil

2 Tbsp. extra virgin oil

1 Tbsp. balsamic vinegar

sea salt and fresh cracked pepper to taste

1 lb. chicken cutlets

Directions:

Season chicken cutlets with sea salt and pepper. Combine all other ingredients and mix well in a small bowl, then set aside. Grill chicken and top with tomato mixture.

Fix Equivalents:

2 cutlets + 1/2 cup bruschetta mixture = 1 Red, 1 Green

 

Raw Berry Crisp

Ingredients:

6 cups mixed berries (your choice)

1 Tbsp. pure maple syrup

1 cup raw pecans

1/2 cup raw walnuts

1/2 cup pitted dates, roughly chopped

1/2 tsp. cinnamon

Directions:

Toss berries and maple syrup and place in 7×11 dish. Cover in crushed nut mixture and top with cinnamon. Chill before serving

Fix Equivalents:

1 cup = 1 Purple, 1 Orange, 3 tsp.
